Honey-Dijon Potatoes

Whole Grain Mustard


  • 2 lb potatoes, skin on, cut into pieces
  • 4 Tbsp olive oil
  • 3 Tbsp Bookbinder's Whole Grain Mustard
  • 2 Tbsp honey
  • 2 Tbsp chopped fresh rosemary, plus more for garnish
  • splash of sea salt


  1. Heat oven to 425F. Wash potatoes.
  2. Place washed and cut potatoes in a large mixing bowl.
  3. In a small bowl, whisk together oil, Bookbinder's Whole Grain Mustard, honey, rosemary, and sea salt. Pour over potatoes and massage glaze into potatoes with your hands.
  4. Place coated potatoes on a baking sheet. cook for approx. 35 minutes until potatoes have softened and taken on a roasted color.
  5. Allow potatoes to cool before serving.
