Mustard-Herb Grilled Veggie Platter

Perfect for summer meals or backyard BBQs, this recipe features grilled zucchini, eggplant, and peppers brushed with a zesty mustard-herb blend made with Bookbinder's Horseradish Mustard.

Ingredients:

  • 2 zucchinis, sliced lengthwise 
  • 1 eggplant, sliced 
  • 2 red bell peppers, quartered 
  • 2 tbsp olive oil 
  • 1 tbsp Bookbinder's Horseradish Mustard
  • Salt, pepper, chopped fresh herbs (thyme, oregano) 

Directions:

  1. Mix olive oil with Bookbinder's Horseradish Mustard, herbs, salt, and pepper. 
  2. Brush onto vegetables. 
  3. Grill over medium-high heat for 3–4 minutes per side.
