French Onion Soup

Stone Ground Dijon Mustard

Ingredients:

  • 3 tbsp butter
  • 2 ½ pounds yellow onions, thinly sliced
  • 1 tbsp flour
  • Salt and pepper to taste
  • 4 cups beef broth
  • 1 tbsp Bookbinder's Stone Ground Dijon Mustard
  • ½ tsp thyme
  • ½ cup cubed bread
  • 2 cups shredded gruyere

Directions:

  1. Melt the butter in a large saucepan over medium low heat.
  2. Add the thinly sliced onions, salt and pepper.
  3. Stir over medium heat for 45 minutes while onions become soft and brown.
  4. Add flour when onions are brown and soft and stir to coat evenly.
  5. Gently add the beef broth, Bookbinder's Stone Ground Dijon Mustard and thyme. Bring to a simmer.
  6. Simmer until slightly thickened.
  7. Spoon soup into oven safe bowl ¾ of the way to the top.
  8. Top with cubed bread and shredded gruyere.
  9. Broil in the oven until cheese is melty and bubbles.
