Smash Burgers with Horseradish Aioli

Shelf Stable Prepared Horseradish

Ingredients:

  • 1½ lbs ground beef 
  • Salt & pepper 
  • 4 brioche or potato burger buns, toasted 
  • 4 slices sharp white cheddar or American cheese 
  • shredded lettuce
  • tomato
  • thin red onion slices

Horseradish Aioli

  • 1/2 cup mayonnaise 
  • 1½ tbsp Bookbinder’s Prepared Horseradish
  • 1 tsp Bookbinder's Stone Ground Dijon Mustard
  • 1 tsp lemon juice 
  • 1 garlic clove, finely grated 
  • Salt to taste

Directions:

  1. In a small bowl, whisk together mayo, Bookbinder’s Prepared Horseradish, Bookbinder's Stone Ground Dijon Mustard, lemon juice, and garlic. Season to taste with salt. Chill until ready to use
  2. Heat cast iron skillet/griddle until very hot (almost smoking). 
  3. Place a beef ball in the pan and smash it flat with a spatula or burger press (you want thin patties with frilly edges). 
  4. Season with salt and pepper. Cook 2–3 minutes until browned and crisp. 
  5. Flip, top with cheese, and cook another 1–2 minutes. 
  6. Spread homemade horseradish aioli on both sides of the toasted buns. 
  7. Add burger patty (or double stack). 
  8. Add your favorite toppings (pickles, lettuce, tomato, onion).
