Ingredients:
- 1½ lbs ground beef
- Salt & pepper
- 4 brioche or potato burger buns, toasted
- 4 slices sharp white cheddar or American cheese
- shredded lettuce
- tomato
- thin red onion slices
Horseradish Aioli
- 1/2 cup mayonnaise
- 1½ tbsp Bookbinder’s Prepared Horseradish
- 1 tsp Bookbinder's Stone Ground Dijon Mustard
- 1 tsp lemon juice
- 1 garlic clove, finely grated
- Salt to taste
Directions:
- In a small bowl, whisk together mayo, Bookbinder’s Prepared Horseradish, Bookbinder's Stone Ground Dijon Mustard, lemon juice, and garlic. Season to taste with salt. Chill until ready to use
- Heat cast iron skillet/griddle until very hot (almost smoking).
- Place a beef ball in the pan and smash it flat with a spatula or burger press (you want thin patties with frilly edges).
- Season with salt and pepper. Cook 2–3 minutes until browned and crisp.
- Flip, top with cheese, and cook another 1–2 minutes.
- Spread homemade horseradish aioli on both sides of the toasted buns.
- Add burger patty (or double stack).
- Add your favorite toppings (pickles, lettuce, tomato, onion).
