Ingredients:

2 cups (or one 14-ounce can) chickpeas

¼ cup olive oil

1–2 cloves garlic

2 tablespoons lemon juice

2 tablespoons tahini

Pinch of cayenne (optional)

Sea salt, to taste

Water, as needed for desired consistency

Bookbinder’s Prepared Horseradish (to taste)
Directions:
- Add all ingredients except Bookbinder’s Prepared Horseradish to a blender or food processor and blend until smooth.
- Add water as needed until you reach your desired thickness.
- Transfer the hummus to a bowl and mix in Bookbinder’s Prepared Horseradish, tasting as you go until the flavor is balanced to your liking.
- For an extra kick, add a pinch of cayenne.
- Serve with pita chips, fresh vegetables, or as a spread on sandwiches.
